夫妻肺片 husband and wife
making beef and beef offal
in Chili Sauce
主料:鮮牛肉、牛雜(肚、心、舌、頭皮等)、

輔料: 老鹵水各500克,辣椒油、油酥花生米、 Accessories: old brine

調料:醬油各150克,芝麻面100克,花椒面25克,八角4克,味精、花椒、肉桂各5克,精鹽125克,白酒50克。

制作流程
Production process
1、將牛肉、牛雜洗凈。牛肉切成重約500克的大塊,與牛雜一起放鍋內,加入清水(以淹過牛肉為度),用旺火燒沸,并不斷撇去浮沫,見肉呈白紅色,倒去湯水,牛肉、牛雜仍放鍋內,倒入老鹵水,放入制作夫妻肺片所需材料(15張)香料包(將花椒、肉桂、八角用布包扎好)、白酒和精鹽,再加清水400克左右,旺火燒沸約30分鐘后,改用小火繼續燒1.5小時,煮至牛肉、牛雜酥而不爛,撈出晾涼。

cloth wrap it ), white wine
and refined salt, add
about 400g clear water,
after boiling on exuberant
fire for 30 minutes,
switch to low fire and
continue boiling them for
1.5 hours, boil and until beef and beef offal become
crisp and unmashed, remove
and cool them.
2、鹵汁用旺火燒沸,約10分鐘后,取碗一只,舀入鹵水250克,加入味精、辣椒油、醬油、花椒面調成味汁。

3、將晾涼的牛肉、牛雜分別切成4厘米長、2厘米寬、0.2厘米厚的片,混合在一起,淋入鹵汁拌勻,分盛若干盤,撒上油酥花生末和芝麻面即成。
